I LOVE sharing great finds! So… as I learn to eat healthier & yes, this includes cooking myself much more… I plan to share great recipes that I find & work out successfully for us! My hubby LOVES him some Mexican food, so what better find to start with than “The BIG Enchilada”… and BIG it was!! I was actually a bit unprepared for how much it would make & ended up with a tupper-ware of extra filling in my fridge (which came in handy later in the week for some quick wraps & quesadillas! 😀 ).

Being that we do juggle a teen & 2 toddlers, learning to make dinners for us also means finding not just healthy but quick/easy options, so we paired it with a simple quick bag of Mexican Style Rice-a-Roni (I ate about 1/2 this portion of rice & was perfectly content) & enjoyed a fabulous meal!

This enchilada cuts up into 8 GOOD sized portions! Being conscious of my ingredients, my nutritional counts came in a little under their counts at the following:

  • Calories: 323.1
  • Total Fat: 11.8
  • Total Carbs: 26.8
  • Protein: 26.5
  • Iron: 8.4%
